Caña de lomo Ibérico 100% Bellota Black Label. Minimum cure of 7 months. When cut, the product presents a faint red color with infiltrations of marbled fat. Sweet aroma derived from paprika. Its flavor is pleasant and delicate, and its texture is juicy.
Salchichón Ibérico 100% Bellota Black Label. Minimum cure of 5 months. Selection of the best noble cuts from our pigs stuffed in natural casing. Sweet, appetizing flavor and easy digestion.

Artisan’s tips
Antonio Jesús recommends tempering the pieces of Caña de Lomo, Salchichón and Chorizo outside the packaging for two to three hours before tasting.
To elevate the experience when tasting the Ham and Paleta, Antonio Jesús recommends taking the container out of the fridge and leaving it under the tap for about 25 seconds at a lukewarm temperature (25ºC). Open the package, identify the slice that matches the mark and place it on the plate. Let the dish rest for 3-4 minutes to taste at room temperature.
Antonio Jesús of La Última Dehesa, recommends for proper conservation:
Keep the pieces of Lomo, Salchichón and Chorizo in a cool and dry place out of reach of sunlight and sources of heat. Once started, in summer, it should be kept cold, between 2 – 5ºc, so that the best characteristics of these products are preserved intact. In winter, you can keep it at room temperature, never in a plastic bag. As for the Ham and Paleta, to achieve optimal conservation, keep it cold between 4 – 10ºC and in its original packaging until it is eaten.
